“The Amazing Eggplant”

Ingredients

2 cups kale greens
1 Tbsp Canola oil
1 red delicious apple, chunks
1 cup seedless red grapes
2 tsp lemon juice, fresh
½ cup pecan halves
1 tsp dried mint, garnish
½ cup raspberry dressing

Steps

Step 1
Tear kale into bite size pieces and place in a large salad bowl.
Step 2
Toss kale with oil until well coated. Add apple chunks and grapes.
Step 3
Add lemon juice, pecan halves and dried mint. Serve with raspberry.
