Mixed Berry Compote

Ingredients

2 cups fresh or frozen berries of choice (strawberries, blueberries, raspberries, or mixed)
¼ cup sweetener of choice (maple syrup, agave, or cane sugar)
¼ cup + ¼ cup water, divided
2 Tbsp non-GMO cornstarch or Arrowroot

Steps

Step 1
In a small saucepan, combine berries, sweetener, and ¼ cup of water. Heat on medium-high until fruit softens. You can blend if you want a smooth sauce or leave it as is. After blending, pour mixture back into pot.
Step 2
In a bowl, whisk together ¼ cup of water and cornstarch until combined. Pour mixture into saucepan and whisk until mixture starts to thicken. Remove from heat.
