Wash and clean sweet potatoes. Peel skin off. Cut into circles and place in steam basket with water (about 4 cups). Cook for about 5 minutes. Test the potatoes by pricking with a fork. Drain water and set potatoes aside.
In a sauce pan, melt margarine and add lime juice, vanilla and Florida Crystals. Heat and stir until sugar dissolves.
Add sweet potatoes and cover potatoes with margarine mixture.
Cook on low heat for about 7 minutes or until the potatoes slices are tender. Sprinkle the lime zest over the top of the sweet potatoes. And garnish with lime slices.
