Ingredients

4 Roma tomatoes (cut into small cubes)
16 basil leaves (cut into ribbons)
Mocks-a-rella Cheeze (cut into small cubes-about 30) see recipe link in directions
Dressing
2 Tbsp extra virgin olive oil
1 tsp lemon juice
½ tsp Himalayan pink salt

Steps

Step 1
In a bowl, combine together tomatoes, basil and Mocks-a-rella Cheeze.
Step 2
In a small separate bowl whisk together olive oil, lemon juice and salt.
Step 3
Pour dressing over tomato salad and toss gently.
