In a large skillet sauté the onion, chopped garlic, with a little oil.
In a separate pot, cook the potatoes and cauliflower until they are soft.
In the pan with the onion & garlic, add chickpeas, coconut milk, and salt. Then add seasonings and mix well so flavors come together until it boils.
Add cooked potatoes and cauliflower and mix lightly.
Just before serving, add a handful of cilantro and mix well.
Garnish with chopped cilantro and serve.

Thank you so much for this recipe. I’m not a big fan of beans but I am trying to incorporate more of them into my family’s diet so I have been looking for recipes I find tasty. This one fits the bill! My husband and I both enjoyed it very much and I’m sure we will be eating it on a regular basis.
