Boil 5 Qts. water
Add 5 Tbsp nettles & turn off heat.
Let sit 2 minutes to remove sting.
Blend onion, ginger, garlic and green chili.
Heat Coconut Oil in a pan over medium heat; Add seeds and allow to sputter around for 1-2 minutes.
Add Curry Leaves. Be careful not to burn seeds and leaves.
Add onion mixture, let cook for 5 minutes.
Add curry powder and cook for 1-2 minutes.
Add potatoes, salt and enough Nettle Tea to cover. Cover and simmer for 15-20 minutes, or until the potatoes are tender.
Add nettles, cook for 5 additional minutes.
