“Friendship Pumpkin Porridge”
Place the peeled, chopped pumpkin in a pot of cold water.
Bring the water to a boil, then lower the heat to medium, cover, and cook the pumpkin until it is completely soft. Add more water during the cooking process if needed. It may take up to 45 minutes depending on the variety of pumpkin used. Mash pumpkin if desired.
Stir the rice and millet into the cooked pumpkin. Continue cooking, stirring occasionally, until the rice and millet are very soft. Add more water as needed during the cooking process.
Add 4 cups of vanilla soy milk and continue cooking for another 5 minutes.
Add salt and/or sugar to taste as desired, stir, and remove from heat.
Serve with honey, berries or jam.
