Starting with 2 cups of water, put everything in a blender and blend until smooth; the batter should be slightly thick. Add water as needed. More water makes fluffier waffles.
Pour in batches into a sprayed, preheated to high, waffle iron.
The batter may thicken between waffles, so add 1-2 Tbsp more water and re-blend.
Cook as your waffle iron directs, usually from 4-10 minutes depending on your iron.
For crepes: Pour the batter by ⅓ cup measure on-to a preheated skillet (a drop of water should sizzle!). Cook for about 2 minutes per side or until golden.
Serving suggestion: Top with apricot sauce and chopped walnuts, or diced pears and a little maple syrup, or use the cran strawberry topping, or get creative!
