Mix the oats, pecan pieces, and coconut together. In a small bowl, mix the maple syrup, vanilla, oil, and water.
Whip until smooth and pour over the dry ingredients. Press into small clumps. Bake at 250 degrees until golden brown.
* Or try baking at 170 degrees overnight. Add dried fruit if you like, or serve with fresh fruit.
