Grill the vegetables in a large skillet with the olive oil, onions, garlic, fresh corn, peppers, green beans, and seasonings and simmer until crunchy tender.
Remove from stove.
Mix the blackened seasoning with the tofu.
Spray a large size skillet with non-stick cooking spray and heat to medium high.
Sauté the tofu on both sides, then set aside.
Arrange the lettuce on a platter or individual plates.
First, put the quinoa on top of the lettuce, then the vegetables.
Top with blackened tofu and serve immediately.
