“Southern Made Simple”
In large pot simmer celery, onions, ½ c water and chicken style seasoning until vegetables are tender.
Add 5 cups of water, potatoes, carrots and soy curls or TVP to the pot.
In blender, mix together garbanzo beans, nutritional yeast, salt and ½ c water until smooth.
Stir into pot garbanzo bean mixture.
Add in parsley.
Simmer 20 minutes on medium. If needed, add additional water for desired consistency.

Very satisfying. I love the idea of blending garbanzo beans and adding them to a soup for thickness and flavor.

I have a quick question…in Step #2, do you need to rehydrate the soy curls before you add them to the pot or do you just add them to the pot straight out of their package?
