“Christmas with the Mena’s”
Preheat oven to 325°F and lightly freeze and flour 4 mini loaf pans or a 9×5 in pan.
In a small bowl, combine the flour, sugar, baking powder, and salt.
In a medium bowl, combine milk and vinegar, then add agave, orange juice, apple sauce, oil, vanilla, Whisk until combined.
Incorporate half the dry ingredients into the we ingredients, blending just until mixed, then repeat with the other half. Add the nuts, and dried fruits and mix until just combined.
Divide the batter into the pans.
Bake the minis for 24-28 min and full loaf 45-50 until lightly golden abs toothpick comes out clean. While warm, poke randomly and pour the apple cider.
Let it cool for 20 min. Then transfer into cooling rack. Let it cool completely.
