“Southern Made Simple”
Place all ingredients except macaroni in a blender and blend approximately one minute until sauce is completely smooth.
Pour mixture into saucepan and heat on medium high until cheese thickens, stirring constantly.
When thickened, mix with cooked macaroni.
(Alternative: Once blended, pour uncooked cheese sauce directly into cooked macaroni. Spoon into oiled casserole dish, top with favorite toppings, cover and bake at 350 degrees for 30-35 minutes. Remove cover and bake an additional 10 minutes.)

Delicious! I made it for pot luck last Sabbath and everyone loved it. And my husband, who is not a vegetarian, said it was good. It makes a 9×13 casserole.

Made this as a white sauce for lasagna and it worked fabulously! I left out the peppers, added a couple more tablespoons of cashews and used 1 3/4 teaspoon salt. Cooked until thickened and then used in my dairy free lasagna layers. SO GOOD! Thank you!
