In a large skillet sauté the onions in ¼ cup water and when they are almost tender, spray the pan and onions with a non-stick cooking spray, then add the burger, garlic powder, cumin, and seasoned salt. Fry till onions are tender and burger is slightly browned. Add the corn, then add all the beans, seasonings, vegan sour cream and salsa in a medium size bowl and mix together until creamy.
Spray a 9.5 by 13.5 casserole dish with non-stick cooking spray, then lay 8 corn tortillas in the bottom. Divide the beans and burger in three equal parts and layer tortillas, beans, and burger three times.
For creamy cheese topping, mix ingredients together and spread on top of the casserole leaving the sides all the way around open. Bake at 350 degrees for 40 minutes or until hot and bubbly. If desired sprinkle crushed tortilla chips on top of casserole. Garnish with a tomato rose and avocado slices. Serve hot with your favorite salsa.
