In a skillet add oil and bring to medium heat.
Add mustard seeds, cumin seeds, and Urad dal and keep stirring. When mustard seeds start to pop, add garlic, green chilies and curry leaves.
Give a quick stir.
Add Brussel sprouts. Give a quick stir.
Add salt to taste and keep stirring them for about 5 minutes. (do not over cook)
Brussel sprouts should be a little crunchy when cooked.
