In a skillet, heat oil to medium heat.
Add onions, curry leaves, green chilies, and garlic.
Sauté until onions are light brown.
Add turmeric powder, Madras curry powder, and edamame.
Give a quick stir.
Add water until edamame are submerged. Cook on medium-high heat for about 5 minutes until water reduces by half.
Add salt to taste.
Add chopped tomatoes and cook until a nice, thick gravy is formed, about 10 minutes. Stir occasionally.
Add cilantro and cook for 2 minutes.
Remove from the stove. Serve with rice.
