Heat oil in a pan on medium. Add mustard seeds, cumin seeds, and Hing. When mustard seeds start popping, add onions, green chilies, and curry leaves. Give a quick stir.
Add ginger and garlic. Cover with the lid on and cook for 2 minutes.
Remove lid and stir until onions are translucent.
Add Madras curry powder, mixed vegetables, and salt to taste. Mix well.
Cook with the lid on for about 5 minutes. Stir occasionally.
Add cilantro. Sauté for another minute. Remove from heat. Serve.
