Cook the sweet potato cubes in a steam basket or in a small amount of water until tender about 6 minutes. Set aside to cool a bit.

While the sweet potato cooks, put all of the dressing ingredients in a blender and blend until smooth.

Pour half of the dressing into the kale and massage it into the kale using your hands, evenly coating the kale.

Mix all of the ingredients together adding as much of the dressing as desired. 

Serve!
