Place cashews, dates, carob powder, cornstarch, salt and vanilla in blender. Add boiling water and blend until smooth. Set aside.
In a medium mixing bowl, combine oil, salt, vanilla, brown sugar, carob chips and soy milk. Stir in flour and oats.
Place by teaspoon or scoop onto baking sheet. Bake at 350 degrees for 15 – 20 minutes. Cool.
Crumble cookies into large crumbs. Place crumbs in the bottom of serving bowl or individual bowls. Spoon pudding on top. Chill.
Top with whipped topping and garnish with fresh fruit.
