“The Vineyard Cafe Breakfast”

Step 1
For the pastry dough, combine all the dry ingredients into a bowl. Then add the butter, and use hands to mix in until a crumbly mixture forms.
Step 2
Pour in 4 Tbsp water and mix until a soft dough forms. (Adding more water if necessary.)
Step 3
Press dough into a lightly oil baking dish, and set aside.
Step 4
Preheat oven to 400°F.
Step 5
Combine oil and Italian “Sausages” into pot on medium heat. Cook for about 3 mins. Then add in onions, garlic, peppers, mushrooms and cook for another 4-5 mins.
Step 6
Stir in spinach, then remove from heat. Add in tofu and all the seasonings.
Step 7
Pour mixture on top of pastry dough and top with vegan cheese (if using).
Step 8
Bake for 25-30 mins until crust is golden brown.
