Pour in 4 Tbsp water and mix until a soft dough forms. (Adding more water if necessary.)
Press dough into a lightly oil baking dish, and set aside.
Preheat oven to 400°F.
Combine oil and Italian “Sausages” into pot on medium heat. Cook for about 3 mins. Then add in onions, garlic, peppers, mushrooms and cook for another 4-5 mins.
Stir in spinach, then remove from heat. Add in tofu and all the seasonings.
Pour mixture on top of pastry dough and top with vegan cheese (if using).
Bake for 25-30 mins until crust is golden brown.
