I had some of this cheese sauce and it is excellent in taste and texture. Now that I’ll make it myself, I wonder if it matters what kind of potatoes for this recipe. Thank you in advance.

Every time I make this sauce people rave about it! I double the recipe for potlucks. I don’t have chicken style seasoning, so I add poultry seasoning and additional salt to taste. I use Russet or Yukon Gold potatoes. I also like to add a 4oz can roasted Ortega Chiles. Yummm!
