“Entrée Salad”
Put all ingredients except chickpeas and quinoa in a food processor and process until blended and smooth.
Add the chickpeas and quinoa and process until blended but still very slightly chunky for texture.
Form into ½ tablespoon size patties and place on a baking sheet that has been sprayed with a non-stick baking spray. Spray the tops of each patty and bake in a 375-degree oven for 15 min. Turn patties over and spray again with the non-stick baking spray and bake another 15 minutes. Remove from oven and serve warm or at room temperature.
Mix all ingredients together and stir until well combined. Serve cold or at room temperature.
To assemble salad, place desired amount of each ingredient side by side in a single serving salad bowl and drizzle with the tzatziki sauce.
