Preheat oven 325°F and using the cooking spray, spray a 8×8 square baking dish, set aside.
In a large mixing bowl, place vital wheat gluten, paprika, nutritional yeast flakes, garlic, and onion powder, mix well.
In a small mixing bowl, mix together the warm water, peanut butter, soy sauce, and liquid smoke. Add slowly into the dry mixture. Stir and mix well, and then knead lightly in the bowl for 10 seconds. This mixture will make a soft dough.
Place dough into the baking dish and flatten so it evenly fills the baking dish. Using a sharp knife, cut 8 strips; then turn the dish and cut those strips in half to form 16 pieces. Place in the oven and bake for 30 minutes (be careful not to burn).
Divide the ribs into 4 sections. Spray the grill and place each section on grill to get the lines. Using the barbecue sauce, brush each rib section on both sides. Return to oven and bake 10 minutes on each size or until the barbecue sauce thickened and caramelized, but do not burn.
