Add Overnight Oat Ingredients to a medium sized bowl or double recipe and add directly to a quart mason jar; stir to incorporate well.
Refrigerate overnight, or for a minimum of 4-6 hours.
Add walnuts and maple syrup to a fry pan; stir consistently 10 minutes on medium heat to evenly roast; Lay mixture on a parchment-lined sheet pan to dry.
Add as a topping to Overnight Oats mixture, with berries or fruit of choice.
