“Pasta Salad”
Cook and cool your favorite pasta.
Cut an onion and marinate it in lemon juice, a little salt and a little honey. Let it rest for 10 minutes.
Add canned red beans and canned corn. Add fresh tomatoes and peppers, cut in rather large pieces. Add pickles cut in cubes, add parsley and lettuce. Toss lettuce by hand.
Add marinated onion. Mix it all well.
For the dressing, squeeze the juice of half a lemon and half an orange.
Mix the citrus juices, pre-peeled and soaked almonds, 2-3 tablespoons of olive oil, a little salt, a medium bunch of basil and a clove of garlic.
Blend them together.
Dress pasta salad with the dressing and sprinkle it with croutons.
