“Potatoes with Dried Plums”
Rinse the dried plums, and pour boiling water over them, letting them soak for 10 – 15 minutes.
Chop the onion, and fry it with a bit of water over medium heat.
Peel and chop the carrot, and add it to the onion, stirring occasionally.
Wash, peel, and cube the potatoes, and add them to the onions and carrots. Stir.
Strain the dried plums, slice them, and add to the frying pan. Stir.
Place all the ingredients from the frying pan into a casserole dish. Salt or add your favorite spices if desired, and add water, covering 1 inch over the level of the vegetables.
Preheat the oven to 360F.
Cover the casserole and bake for at least 4 hours until the potatoes change from white to light or dark brown.
Be sure to watch the water level, and be careful not to let the vegetables stick to the bottom. Add more water as needed.
For the final 30 minutes, you can partially open the lid.
Serve hot, and enjoy the rich flavor!
