Process almonds, dates, carob powder in the food processor until a sticky dough ball forms.
Press half of the dough into the bottom of a loaf pan lined with parchment (9”x5” loaf pan). Keep the other half of the dough wrapped in plastic.
Blend slightly thawed frozen bananas and add Fruits for other flavors of ice cream, recipe above.
Spread the ice cream on top of the Bottom Layer of the cookie sandwich.
Freeze until the fruit ice cream layer is frozen– time will vary based on how cold your freezer is.
Press 2nd half of the dough onto the top of the fruit ice cream layer. Return to freezer for 30 mins.
Allow to thaw for a few minutes before cutting into bars/squares
