Thanksgiving Supper Celebration
Steam red skin potatoes in 4 cups boiling water, in large saucepan until tender; about 15 -20 minutes.
Drain and mash slightly potatoes with potato masher.
Add soy milk, margarine and salt. Mash potatoes until combined and smooth.
Transfer to a serving bowl.
Cut chives into small pieces and sprinkle over mashed potatoes in bowl.
