Rustic Zucchini Stew

Ingredients

¼ cup water
2 medium onions (sliced into ½ circles)
6 Roma tomatoes (cubed)
6 medium zucchinis (cut into ½ moons)
½ Tbsp dried oregano
2 Tbsp olive oil
2 tsp salt
Parmesan-like Cheeze (optional)

Steps

Step 1
In large pot sauté onions in water until softened.
Step 2
Add tomatoes, zucchini and salt.
Step 3
Heat on high until the vegetables become tender then add oregano and olive oil.
Step 4
Top with Parmesan-like cheese (optional).

I just made this and shared with 2 others Very Delicious soup and hearty as well. we are having a chilly day so soup is Great on days where the weather is cold
