Preheat oven to 400 degrees.
In a food processor, blend tofu until smooth.
Add lemon juice, garlic powder, salt, nutritional yeast flakes, turmeric powder and soy parmesan cheese (save a little to sprinkle on top of pie).
In a skillet sauté onion in olive oil until translucent.
Stir in sausage crumbles and continue cooking on low about 3 minutes.
Stir in chopped spinach. Stir sausage, spinach and onion mixture into tofu mixture.
Pour into pie shell; sprinkle on remaining parmesan cheese and bake for 1 hour or until center is firm. Quiche will get firmer as it sits.
