“Balanced Meals”
Bring cashews to a boil in enough water to cover, and simmer until soft.
In a medium skillet, sauté onion and garlic in olive oil, adding a little salt.
Add tomato, tomato sauce and coconut milk. Drain cashews and add.
Salt to taste, and simmer until flavors are blended.
