Soak one cup of sesame seeds in 2 cups water for 30 minutes.
Place the sesame seeds and 2 cups of water in a blender and blend it into a paste. Pour the mixture into a bowl.
Add the remaining ½ cup of water to the blender. Pulse a couple of times until the rest of the sesame seeds are blended.
Heat oil in a pan on medium heat. Add mustard seeds, cumin seeds, Urad dhal, and red chilies.
When mustard seeds start popping, add Hing powder and give a quick stir. Add onions, green chilies, curry leaves, and whole peeled garlic cloves. Add a little salt and stir.
Add turmeric powder, Madras curry powder, sesame seed paste, and more salt, if needed. Mix well.
Add the remaining sesame seed water, cover and cook for 10 minutes on low heat, stirring occasionally.
Cook until the water evaporators for additional 3-5 minutes and keep stirring.
Serve with rice or Roti.
