While vegetables are cooking, in a separate saucepan, add soy curls, 1 cup water and seasonings and bring to boil, allowing soy curls to rehydrate.
Add soy curls to sauté pan with pepper and onions and heat together for 1-2 min. until heated through and flavors have melded together.
In separate pan, heat tortillas on each side about 15-20 seconds to soften and warm.
Add soy curl mixture to the tortillas.
If desired, top with salsa, guacamole, and plant-based sour cream.

As a vegan who doesn’t love beans, I’m always trying to find recipes that incorporate them in a way I can enjoy. I’ve found I really like the Butler Soy Curls, and this is a great recipe to use them in.
