Preheat oven 400 degrees.
Wash potatoes. Cut them in half then into 8 wedges.
Place the potato wedges in a saucepan of cold water.
Bring to a boil, then lower heat and simmer for 8 minutes.
Drain and pat on paper towels.
In a large bowl mix together olive oil, garlic, paprika and coriander.
Add the potatoes and coat all over.
Roast for 20 minutes, turning occasionally. Serve with favorite sauce.
