In same skillet add rest of oil and sauté onions, peppers and garlic until tender. Stir in seitan slices.
Spoon equal amounts of seitan mixture in the center of each “Stand’n stuff” taco shells. Serve open face with salsa, soy sour cream.
Serve hot and garnish with chives. Makes 4-6
