Heat oil in a large skillet. Add garlic and sauté until lightly browned.
Add onions and fry lightly. Add celery and carrots, then add snow peas. Cook only until crisp-tender.
Add peppers and fry for about another minute. Stir in soy curls and soy sauce.
Mix cornstarch slurry and vegetable broth and add to vegetables. Cook, stirring, until thickend. Serve with a side of brown rice.
