In a blender place ¼ cup of cold soymilk. Add frozen bananas and frozen strawberry halves. Blend until smooth.
While blender is blending add maple syrup and remaining soymilk.
Process until soft peaks form and mixture is the consistency of a thick sorbet. Serve in parfait glasses with mint leaves.
