“All Things Stuffed”
In a large bowl mix all the ingredients together except for the avocado and tomato.
Stir together until well blended.
Cut the avocados in half, remove the seed, then scoop out the middle.
Cut the avocado into medium size pieces.
Gently mix with the rest of the ingredients, along with the tomato.
Fill the avocado and red pepper halves and garnish top with fresh parsley or favorite herb.
Chill in refrigerator for about 30-40 minutes. Serve cold.
* This yummy salad can be used to fill any vegetable of your choice. It is a fun thing for the kids to do. When we were little some of the best times we had together was helping Mom make good food. Cooking in the kitchen with your kids or grandkids is a time to bond and make happy memories for the future. Just being together is fun!
