Heat oven to 375°F. Spray casserole dish with non-stick spray.
Sauté celery and onions in vegan butter until tender (3mins).
Add 2.5 cups of vegetable broth and stuffing mix. Reduce heat to medium-low, add 1 cup of vegetable broth and stir in cornmeal until the mixture combines with vegetable broth.
Add additional seasonings to taste.
Remove and put in casserole dish.
In a separate bowl add 1/3 cup of liquid from drained chick-peas. Whip the liquid until you see foam.
Stir liquid into the stuffing mixture and bake for 15-17 minutes or until mixture is crispy on top.
