In a medium saucepan, combine coconut milk, brown sugar, half of the orange rind and salt.
Cook, stirring, until thickened and lightly browned.
Stir into sticky rice and bake at 350 degrees for 10 – 20 minutes.
Garnish with remaining orange rind. May also add fresh fruit, like mango.
*Can also be served cold.
