“Breakfast Made Simple”
Rinse tofu in cold water and drain.
In a large mixing bowl, mash tofu into chunks with a fork or potato masher.
Mix in seasoning.
In a skillet on medium-high heat, sauté onion and pepper in water until soft. May need additional water to prevent the vegetables from sticking.
Add tofu and seasoning to skillet. Stir together on medium heat for 5-10 minutes.
When the consistency is like that of scrambled eggs, add diced tomatoes.
For an optional flavor boost, sprinkle a little bit of taco seasoning on top.
