Put the water and potatoes in a large pot and begin to heat over medium high heat.
In a no-stick skillet over medium high heat, sauté all the other vegetables in a small amount of water (1-2 Tbsp).
Add all the vegetables and seasonings to the pot with the potatoes. (Chicken Style Seasoning recipe )
Simmer until all the vegetables are tender.
Serve with a dollop of sour cream or tofu mayo in the center of each bowl of soup.
*NOTE: If using the pasta, add the last 10 minutes of simmering. This is not a traditional ingredient in borscht, but using whole wheat pasta shells is delicious to pasta lovers.

Heat the oil in a skillet over medium heat. Add the onion, and cook until tender. Stir in the tomato paste and water until well blended. Transfer to the pot. Add the raw garlic to the soup, cover and turn off the heat. Let stand for 5 minutes. Taste, and season with salt, pepper and sugar.
