Toast nuts in a toaster oven until slightly browned.
Chop dates into ½ inch pieces.
Pulse nuts in a food processor for 2-3 pulses.
Place dates in a food processor.
Pulse until minced. Add the cardamom and then spin briefly until a coarse mixture forms.
Take a tablespoon full of the mixture into your hands and roll in your palms until it is round.
Repeat with the remaining mixture.
Store in an airtight container in the refrigerator.
Serve as a healthy snack or dessert.
