Sauté thinly chopped onions in olive oil.
Once they turn golden brown, add ginger garlic paste.
Continue to sauté until the raw smell is gone.
Reduce heat, add turmeric and cayenne, and mix well.
Once the mixture is about to be very dry, add tomato paste, mix well and heat until it starts to cook.
Add steamed vegetables, mint leaves; stir occasionally. If mixture is too dry, add water as needed.
After 3-5 minutes, turn off heat; add ground Cashews and Coconut Cream; stir well until combined.
Garnish with Coriander Leaves.
