Heat oil in skillet and add cloves, cardamom, anise star, bay leaves, cinnamon stick, cashews, chilies, curry leaves, onions and ginger and garlic paste.
Add mixed vegetables. Stir-fry for about 5 minutes. Add rice and stir-fry until well coated, about 3 minutes.
Transfer into rice cooker or saucepan. Add 4 cups water. Salt to taste. Cook until water is absorbed.
* Try with brown basmati rice.
