Cut all vegetables and set aside.
Fill large wide deep dish with water. Dip each rice paper in water until flexible. Place on cutting board.
Add one leaf of lettuce in the middle, then add other vegetables.
Bring sides of rice paper in so they touch and stick together, then roll up.
Whisk peanut butter and water together in a medium saucepan on medium heat until smooth.
Add soy sauce, garlic, ginger, sesame oil, sugar, and lemon juice. Continue whisking until it’s well combined.
Cool slightly, then serve with rolls.
